\nWinemaking Notes: The Azimuth is crafted to be seamless in both its youth and after many years in bottle. As in many past vintages, Mourvèdre rose to the challenge of providing a foundation for the blend. Clone 362 Mourvèdre from one of the original Estate Vineyard blocks was harvested on the 8th of November and fermented on its own in a small open-top vessel. A companion lot of the same Mourvèdre was co-fermented in a second vessel with fruit from a young block of Mataro harvested the same day. Combined, these two lots expressed earthy and gamey qualities, dark and complex fruits alongside younger and brighter black fruits, spice, and bramble. Building complexity and structure, Block 10A was used for the entirety of Grenache in this blend. Coming from young vines as well, wine made from this block demonstrated an almost nori-like salinity, sweet black and red fruits, and incredible color. Syrah from clones 470 and 383 rounded out the blend, contributing complementary earthy accents, supple tannins, and a long, resonant finish. Élevage included a selection of new 400L and 500L Bel Air and Ermitage barrels, chosen for their ability to impart gentle structure while enhancing the wine’s natural spice, florality, and overall harmony.

The vines, approaching 20 years in age, lend beautiful fruit with depth and structure that only old vines seem to offer. The two picks from Block 1 were made a week apart and fermented separately using an average of 45% whole cluster fruit. 2% of the blend is derived from block 10A, a younger block that, despite its age and small percentage, provides dark color and fruit tones with a earth and salinity that adds to the complexity and persistence of flavor. The remaining 10% of the blend comes from Yankowski vineyard, which reliably yields small clusters and small berries that impress with their wild berry and floral tones, contributing richness and aromatic intensity along with a sense of tension from its vibrant minerality. A selection of Bel Air and Ermitage 400L and 500L barrels, both new and once-used, were chosen for their ability to enhance roundness, highlight minerality, and their subtle bouquet and flavor that doesn’t overshadow the more delicate Grenache characteristics.

This clone was notable for its intense black and red fruits, citrus, and floral notes, with soft tannin and persistent, driving acidity. Harvested on the 6th of November, this fruit was fermented with native yeast and 40%, uncrushed, whole cluster fruit. The second major component is clone 362 Grenache from the Estate Vineyard, taken from the second pick of the block on October 26th. Owing to the cooler season and the lower elevation of this pick on the terraced block, the fruit naturally retained vibrant acidity. Also fermented with 40%, lightly treaded, whole cluster fruit, this lot complements the 136 clone with additions of rose and lavender floral notes, riper red berries, and round, persistent, and supple tannin. A small portion of clone 362 Grenache from Yankowski vineyard lends additional complexity and structure to the final wine. After blending, the wine was transferred to a 10hL concrete egg and large-format, neutral French oak barrels for élevage, a combination chosen to accentuate its minerality while preserving the exotic, explosive aromatic profile.

\nTasting Notes: A deeply colored wine, the 2021 Cohort transforms through several compelling acts, revealing layer upon layer of its mysteries as it opens in the glass. Earthy Maitake mushrooms and truffles make a brief appearance before gracefully yielding to a more expressive core of dark plum, red cherry, fresh fig, and a hint of blood orange zest. Crème de Violette and a dash of green mint carry effortlessly to the palate. The entry is firm but silky with wonderfully balanced acidity. Chewy, full-bodied tannins build through the mid-palate and persist through a finish full of blended raspberries and strawberries accented with crushed red flowers.
\nWinemaking Notes: All varieties were fermented separately in a combination of closed-top, stainless steel fermenters and open-top macrobin fermenters. The Petite Sirah and Syrah were completely destemmed, while the Grenache and Mourvèdre were fermented with a range of 30%-60% whole-cluster fruit.
