Our Cabernet Sauvignon garners its distinctive style from the diverse vineyards found in the mountains, bench lands, and valley oor of Napa Valley. e well-drained, nutrient-deprived soils found in each of these topographies stresses the vines, resulting in grapes with extraordinary color, texture, and avor concentration. Blending these grapes allows us to bring together the unique terroir of each location and craft a wine that's greater than the sum of its parts, marrying the rm tannins and weight of the mountains with the supple fruit-forward notes of the valley oor while maintaining natural acidity. For our 2019 Napa Valley Quilt Reserve, we tasted the developing wine throughout the fermentation and aging processes, then set aside the best 2% for this reserve bottling. Our lot selection was based on intensity, complexity and boldness of expression that could withstand a longer aging cycle and heavier use of new French oak.
\nTASTING NOTES:
\nCOLOR: Deep garnet.
\nAROMA: Rich notes of chocolate, black currant, ripe blackberry, and marionberry intertwined with caramel and leather.
\nPALATE: A complex and bold assemblage of dark currant, blackberry, marionberry, and toasted hazelnut balanced with hints of cardamom and dry dark chocolate.
\nSTRUCTURE: Beautifully rounded and unctuous with a velvety mouth-feel. is re ned wine is a sensational expression of what a Napa Valley Cabernet represents with its smooth long nish and ne-grained tannins.
\nFOOD PAIRING Prime rib with sautéed mushrooms, pepper crusted grilled lamb, or short ribs with garlic polenta.

Regular visits and assessment of each block direct us to harvesting at the right moment. Our assessment consists of testing sugar levels, acidity and pH, but more importantly, waiting for phenolic/physiological maturity. We want to see hard, brown seeds, copper canes, and yellowing of the canopy with some slight dimpling from dehydration on the skins. is gives us the assurance we will have no green tones in the resulting wine and the structure and intensity will be at its height. In the cellar, we de-stem all Cabernet Sauvignon and move the must to a temperature-controlled tank where it will begin a partially frozen cold soak for up to 2 weeks, and pump overs each day to prepare the skins for proper extraction. We then begin a cold fermentation, aiming for 30 days of active fermenting to slowly pull the color and structural elements out of the skins without getting seed tannins. After we achieve dryness, the wine sits under cap, in extended maceration for up to two weeks at which time we re-evaluate the progress of each lot before moving the wine to 59 gallon French oak barrels (70% new) where it undergoes a secondary fermentation. Our nal blend (100% Napa Valley Cabernet Sauvignon) is the result of numerous blind tastings and is the pinnacle of our Cabernet Sauvignon production.

","wine-enthusiast":null,"winemaker-notes":"Our winemaking begins in the vineyards, picking fruit at optimum physiological maturity to create a blend that highlights the outstanding terroir of the Napa Valley. From the moment the grapes are harvested until final blending, each vineyard lot is kept separate. Once in the cellar, each lot is worked within a tailor-made fashion. Typically beginning with a deep cold soak, (cryoextraction) to best prepare the skins to give up all the phenolics and color they can during fermentation. Cold and long fermentations allow ample time to coax these elements out. Finally, extended maceration to soften harsh tannins. en, we age the wines in French Oak barrels. e Petite Sirah adds spice and complexity, while the Merlot contributes round mouthfeel and soft tannins. Next, the Zinfandel provides a vibrant fruit core, and Petit Verdot gives structure and color to the final blend: e Fabric of the Land, Napa Valley.
","production-notes":"For our Napa Valley Quilt, we work with grapes representing the diversity of varietals cultivated in the Napa Valley AVA. We source Petite Sirah, Merlot, Zinfandel, and Petit Verdot grapes from a spectrum of Napa Valley proper. From Oak Knoll in the South to Calistoga in the North. e result of blending these diverse varietals and regions yields wines of extraordinary concentration of flavor, color, and texture. While the majority of the fruit comes from the valley floor, we also relied on grapes grown on the foot-slopes to achieve the texture and grip we desired.

of flavor, color and texture. While the majority of the fruit comes from the floor of the Napa Valley to achieve the richness and elegance desired, we also relied on some grapes grown
in the well-drained gravelly soils of the side slopes along with high elevation in the mountainous areas for a blend with more structure and complexity than we could have achieved had we used fruit grown solely in a single region.

Aged for 15 months in new French and American oak barrels, this is a lady in the streets, freak in the sheets type of Chardonnay. That said, it leans more on the whore-ish side. A wild and loose profile with a tight acidity lends to a playful experience going down your throat. After a long, hard day at work, what do you want to cup in your hands and put in your mouth? You guessed it, a BBC. With a blend of 60% French Oak and 40% American Oak, 100% ML Fermentation, and a meticulous process including barrel fermentation, aging, and lees stirring, this wine promises an unforgettable experience.

We test sugar levels, acidity and pH, but more importantly, we want phenolic/physiological maturity. With hard, brown seeds, copper canes, and yellowing of the canopy and a slight tan to the golden clusters. Once in the cellar, we whole cluster light press. We barrel-ferment the wine in French oak (70% new) for 15 months. Fermentation can last 45 or more days with lees stirring during the extended fermentation. Then 100% malolactic fermentation while still on lees for creaminess and complexity.

After destemming, the intact berries underwent a cold soak for up to two weeks to soften the skins and encourage optimal color and avor extraction. Fermentation occurred in a mix of open and closed-top stainless steel tanks, using both punch-downs and pump-overs to extract tannins and manage temperature. Only the free-run juice was barreled, then aged for nine months in 100% French oak (60% new). After the rst racking, malolactic fermentation was completed, followed by a second racking prior to blending and bottling

We adhere to practices such as harvesting at peak physiological maturity, employing cryo-extraction, conducting cold fermentation, meticulously stripping barrels, and subjecting the wine to 100% new French oak aging for a luxurious 24 months. Additionally, our dedication extends to delicate lees stirring and precise racking every 3-4 months.
\nOur ultimate goal with each of these wines is to illuminate the unique characteristics of their respective AVAs, showcasing the exceptional qualities that set them apart in their standout vintages. In the 2021 vintage, marked by its light crop and warm climate, we were gifted with exquisitely ripe and supple fruit from 5 AVAs to work with in the cellar.
\nthe Quilt Classic Cabernet represents a blend of outstanding AVAs, our selection process identified the most exceptional barrels from distinct regions across Napa Valley, each boasting its own distinctive soils and microclimates. Through reactive winemaking techniques paired with meticulous aging protocols, we take immense pleasure in presenting wines that authentically capture the nuanced differences of these AVAs.
\nTasting Notes
\nRutherford's essence is captured perfectly in this wine, with its unmistakable dusty nose taking center stage. The earthy tones persist on the palate, revealing lusciously ripe strawberries amidst a backdrop of dry, chalky tannins that offer both comfort and structure. A gripping acidity elevates this wine beyond mere pageantry.

This wine has a well-rounded finish, where the essence of dark chocolate lingers deliciously on the palate.

Napa Valley AVAs: Oakville, St. Helena, Atlas Peak, Coombsville, Calistoga, and Howell Mountain.

\nFor our 2017 Napa Valley Napa Valley Quilt Reserve, we tasted the developing wine throughout the fermentation and aging processes, then set aside the best 2% for this reserve bottling. Our lot selection was based on intensity, complexity and boldness of expression that could withstand a longer aging cycle and heavier use of new French Oak.
