A powerhouse Napa Cab that’s light on its feet. Aromas of melted chocolate, raspberry sauce, vanilla bean, blackberry pie, cinnamon apples, garden roses, Kalamata olives, and caramel. The palate opens rich and silky. Ultra lush velvety vanilla, dark chocolate, juicy black cherries. Impeccably balanced. A tightly wound, muscular beast. Best decanted. Drink 2020-2039.
\nFrom Decanter: \"91 points. An ultra-ripe style showing blackberries, raisins and mint, white pepper and red currant complexity and a sweet spice finish.\"

On the palate, it's a stunner. Muscular, vibrant, and impeccably balanced, with wild summer blackberries, juicy plum flesh, rich creamy mid-palate of cappuccino foam, building to waves of undulating chocolate that lead to an immense and fulfilling finish. Drink 2021 to 2041.
\n\n
March through August saw a fluctuation of cool and hot days, but the moisture retained in the soils due to a wet spring gave the vines a fighting chance against extreme heat events of the growing season. Crop yields were moderate to abundant and of very high quality for us.
\n\n
The 2017 OKAPI WINES Cabernet Sauvignon is a polished, yet rich wine with a deep garnet hue from layers of intense fruit. On the nose, aromatics of black cherry, sweet floral scents, anise, dried sweet tobacco, and dark cocoa. On the palate, we get an intermingling of dark cassis, red cassis, fine-grain tannins giving way to juicy acidity and an overall rich and mouth-coating texture. The finish is lengthy exuding forest floor scents and bright red fruit. A lovely wine that is enjoyable now and can be cellared and taste great after 10 or 15 years.

\nThis wine greets you with rich, inviting scents of ripe black cherries and blackberries, complemented by pleasant touches of cedar, leather, and toasted oak. Underneath, you'll find comforting hints of chocolate, warm bread, and coffee.
\nFlavors unfold in delightful waves—fresh blueberries and cherry cheesecake mingle with roasted sage, cinnamon graham, and sweet vanilla bean. The complexity continues with hints of crushed flowers, milk chocolate, and boysenberry juice and lingers through the exceptionally long, satisfying finish.
\nWhile this Cabernet is drinking beautifully now, it has the structure to age well for 15-20 years. The winemaker's approach highlights the best qualities of the two Cabernet Sauvignon clones, showcasing what makes this Napa Valley vineyard special without trying too hard to impress.

The lengthy, elegant finish brings together flavors of root beer float and strawberry preserves with a gentle whisper of white pepper.
\nThe winemaking approach honors tradition, fermented in small open-top containers on native yeasts, then gently pressed to barrel for 17 months. A restrained 25% new French oak from Burgundy's Francois Freres cooperage provides structure without overwhelming the wine's natural fruit character. Bottled unfiltered to preserve its full expression, this Pinot Noir captures the essence of its exceptional coastal origins.

The bouquet opens with ripe pineapple and honeydew melon, layered with delicate notes of brioche and honey. White roses and fennel flowers lend an elegant floral quality, while marzipan and citrus zest add some intrigue. Bright touches of lemon popsicle, apricot juice, and lemon peel round out this complex aromatic profile.
\nOn the palate, the wine is beautifully focused, luxurious and creamy, yet electric with vibrant energy. Flavors of buttery shortcake and orange crème fraîche mingle with pastry crust and marzipan, while zesty lemon juice and wild herbs bring some brightness and dimension. The finish is delectably long, leaving a lasting impression of balance and refinement.
\nThis Chardonnay's exceptional character comes from careful, thoughtful winemaking. The grapes were whole cluster pressed directly to French oak barrels, with each vessel receiving a unique portion of the press fractions, adding layers of complexity. Five distinct yeast strains were paired with individual barrels to bring out the vintage's most balanced expression, while minimal to zero malolactic fermentation keeps the wine's natural vibrancy intact. After fermentation, the wine rested undisturbed for eight months without stirring, allowing its character to develop with patience. This Chardonnay reflects a hands-off approach that lets the fruit and the land it came from truly shine.

\nProduction Notes
This most elegant expression of our Cabernet was made through a meticulous process
of blending three different \"lots\" harvested the same day, aged separately (66% new French oak), and assembled only six weeks before bottling. All of the grapes went
through the same process for destemming and optical sorting, and we pulled off up to
10% of the juice to help concentrate the flavors (saignée). We then cold soaked for five
days without adding sulfur dioxide. The yeast introduced was a combination of
indigenous and William Selyem. After about 20 months in the barrels, we tasted
everything to make our final selections for blending the Reserve: Lot 1 was entirely
clone 337 grapes barrel fermented in neutral French oak. Lot 2, also clone 337, was
fermented in an open top fermenter and punched down by hand. Lot 3 came from the
clone 4 block in our vineyard. It fermented in a temperature controlled stainless steel
tank. We are especially proud of this wine and can't wait for you to try it.
