WINEMAKER NOTES: 100% Estate Cabernet Sauvignon that sings of its historic, Rutherford terroir.  Lovely & classic!  Aromatic highlights of cedar and sweet spices-including star anise- set the tone for the flavors: ribbons of dusty blackberry, deep plum & cassis fruit.   2022 was, literally, a perfect growing year until the valley was 'attacked' over Labor Day by an unrelenting heat dome for over a fortnight.  I attribute the rich but definitely not over-extracted, and elegant character of the 2022 Cabernet to our viticultural practices.  Vines are defined by the resilience of their heritage (they're hard-wired to withstand a range of growing conditions) but they need an extra boost in these dramatic. climate-challenged times.  Our regenerative soil-sustaining activities--planting cover crops, running animals through the vineyard, adding compost and bio-char, mowing or crimping instead of tilling-- all feed into the general idea that while, sure, we're aggravating \"nature\" with our agriculture, we can do our best to emulate natural processes, get the roots and soil biome communities communicating with each other and help to insulate the vines from too much stress.  We invite you to explore our terroir --and our Cabernet's vitality--in what turned out to be a most lovely vintage for Tres Sabores

I recall that we composed this blend from some 22 individual barrel lots! The fruit was sourced from a broad geographical range of vineyards and elevations with the goal of optimizing the fruit quality and individuality of the various terroirs.  Hand picked, meticulously sorted and either just de-stemmed (Zinfandel), partially de-stemmed/ crushed (Petite Sirah) or crushed (Cabernet Sauvignon and Petit Verdot).  50% natural fermentation. Aged in largely \"previously inspired\" (neutral) French and American oak barrels.

WINEMAKER NOTES: It's an original, it's a salsa party, it's a delightfully smooth blend that needs no special occasion to open and enjoy anytime--with anyone! Crafted with the playful souls and generous hearts of the grapes in mind, we love the results: layers and layers of ripe dark berries, spices, and chocolate. It's robust, yet smooth and satisfying. Hand-picked from two blocks on this perfectly sited vineyard in the northeastern edge of Calistoga near the majestic Palisades.  Barrel aged for 26 months in 30% new American oak.  Our relationship with the Guarino Family dates back to 2006. We use another block of this vineyard to produce our Rose'.

Winemaker's notes: Abundant Marionberry, cedar, and roasty-chocolate notes infuse this wine from start to finish. It's our most rambunctious, gregarious wine: perfect for a BBQ feast, roast lamb with mole, or just for sipping by a fire with your robe and slippers on!  Petite Sirah, 'neither petit nor Syrah\" , was kicked out of France at the end of the 19th Century because of its tightly packed, mildew- susceptible clusters, only to be embraced by Napa vignerons for its tolerance of heat. It's also a grape that thrives and reveals its rich personality when dry-farmed. We know that Petite Sirah was likely the first variety to be planted on our own property, sometime around the 1890's. Once grown in over 50% of Napa's vineyards (sadly, only 3% now) its robust, deep, dark, and delicious character has made it an enduring favorite.  I try to pick when the skins yield their stiff tannins to a more 72% Cacao, silky Chocolate taste and texture (just as a bit of sweet citrus crosses the palate as well).  Enjoy!

VITICULTURE: Certified organic, dry-farmed, no till. Napa Green Certified.

CASE PRODUCTION: Limited to seven barrels.  Hand harvested over four picking dates to \"follow the terroir\".  Destemmed and lightly crushed into T bins.  Gently hand punched down during a 50% wild yeast fermentation. Aged 22 months in French Oak (30% new)

WINEMAKER NOTES: 100% Estate Cabernet Sauvignon that sings of its historic, Rutherford terroir 'roots', where deep alluvial fans provide excellent drainage and, if stewarded well, particularly excellent quality.  A lovely & classic Napa Valley wine, emulating our region's history of making Cabernets that were lower in alcohol but rich in individuality.  The Tres Sabores vineyard is in shade by the late afternoon in September which means that the dynamic flavors come from the exposure of the clusters to the morning sun (and that the vines get a break from the intense afternoon heat: a much-needed opportunity to \"refresh\" themselves before the next day of ripening begins). You will relish the aromatic highlights of cedar and sweet spices-including star anise- that set the tone for the flavors: ribbons of dusty blackberry, deep plum & cassis fruit.

WINEMAKER NOTES: “Like a dive into a luscious bowl of summer plums & cherries and coming up with a great plan for dinner! St. Laurent, a rarely grown grape of northern European origin, makes a very dark wine flush with fruit but with lower tannins and a naturally low alcohol, making it pair perfectly with a wide array of tantilizing, spicy foods.”  (Start with an umami-rich Seoul Ramen and go from there!) Adding a tiny fraction of Tempranillo lends a pleasing roundness to the wine even as both grapes, with their cherry, tobacco, earthy characters, compliment each other in this unique (to say the least!) blend.

Hand-picked over five dates \"moving west, up the alluvial fan\".  Meticulously sorted in the vineyard and again on the crush pad, de-stemmed (no crushing) to T Bins.  Gentle hand punch-downs during (50%) wild yeast fermentation. Aged in 30% new French oak for 22 months.

WINEMAKER NOTES: It’s simply splendor in a glass! Sumptuous Brambleberry-forward aromas and fruit-filled spicy, white pepper flavors with supple tannins invoke a classy, ‘jazz club’ vibe. (Definitely not your uncle’s jam). We love making this naturally well-balanced, complex, and pleasing wine from 'our front yard'.  My respect for the resilience of these vines (manifested in stewarding the health of their soils) has been more than rewarded, vintage after vintage, by the revelation of the exuberant and elegant capabilities of their wines.  (So very \"Zin\" of them!)

WINEMAKER NOTES: Grown at a 2000 ft elevation above Placerville, meticulously farmed by Irene & Nemorio DeCasas.  Fermented very simply to embrace the natural \"no frills\" character of this classic northwestern Italian grape \"of the people\".  Aged in neutral vessels to help reveal its essence. A wine of lovely complexity, we find notes of ripe plums and strawberries, a touch of vanilla bean, 'wild berries on a farmer’s fence', and just the right hint of bay and cedar.  This Barbera reads savory and smooth with medium tannin (belying the grape's reputation for being a bit too rustic) . Enjoy with a wide variety of food pairings, cheeses, salumis, and olives (try any of your Italian favorites, especially something tomato-based, as the fruit acids truly complement each other).

Fun fact:  Not deer but bears are often Nemorio's competitors when the fruit is ready to be harvested.  Usually, he cedes them a \"Bear's Share\" :0

A singular, 5-acre vineyard yields a tantalizing wine from this Northern European grape.

\n

Winemaker Notes: Jon works with Miguel to carefully create the layers in each Clay Amphora: first come the whole grape clusters, then destemmed whole berries. Jon pokes and prods a bit. As someone who had a career as production winemaker at larger facilities (i.e. you better have a well scripted plan today for what will happen tomorrow), he says he now revels in approaching his ferments with an eye toward what is revealed at the dawn of each new day. I watch and celebrate both the process and the marvel of the dedication-to-craft involved with all of this. I taste the development of the unctuous cherry and earthy characters that are the marvel of this rare grape.  Particularly since the end result is so charismatic, such a soulful individual, so versatile with food. True to its Northern European roots, this wine just loves rich, but also spicy pairings.

WINEMAKER NOTES: What a great glass of wine!   Blossoms bloom with fragrance, tropical fruits dance on the palate.  The wine has a smooth texture-- but a delightful vein of minerality and pizzazz runs through each taste: it has it all! We just kept layering in flavor with these rarely-grown Rhone varietals, adding an extra dollop of hillside Picpoul blanc to bring everything together.  What were we thinking about when we crafted this wine?  An invigorating “walk by the bay” (or the ocean) and a savory meal (seafood or poultry) to follow.  Hand-picked from high elevation vineyards and whole-cluster pressed. Cool fermentations kept the tantilizing aromatics flowing.

Winemaker notes: A Rhone rarity grown in ancient sandy soils at a 2,000 ft elevation. Each vintage, we’re discovering new ways reveal both its sublime depth and its wild, tropical spirit (as the name suggests, it’s a rather “piquant” character!) Picpoul almost certainly has a split personality!  On one hand, you can’t beat the gracious aromatics: Asian Pear and Pippin apple, with just a touch of tropical flair. Those sensations lead to expectations of satin-like viscosity and pleasure in the glass.

A note about Picpoul: Only 207 tons (out of over 1.7 million tons of white wine grapes) were crushed in California in 2019. This lovely, but obviously very rare grape is blended in for acidity in Châteauneuf-du-Pape—one of only 13 varietals given that privilege! In the Languedoc region it’s known as Picpoul de Pinet and is known for its expression of a savory, even saline character.  Here, in ever warmer California, the ability of this grape to generate acidity is an asset, complementing its tropical fruit essence. On any given day, at any given temperature—we find a range of sweet citrus, pineapple, apricot, Mango aromatics and more in this wine. Tablas Creek is the hero of the origin story here in the states as it was the first estate to bring this grape to California, planting the first acre in 2000.

Winemaker's Notes: Sixteen rows of sun-swept hillside produce a terroir-specific gem. Like an aromatic walk through a farmers’ market, with white nectarine and heirloom cider apples!
